Anyways the meaning of me telling you about Tropico is that is inspired the recipe for today. During the game its this music which sounds like a super happy fiesta music mixed with a super happy island music...its a combo that gets stuck into your head and you find yourself humming it in the shower. Its pitiful. Okay, sorry enough of the rambling, now on to the recipe! (I know all of you are absolutely on the very edge of your seat in suspense, calm down, I'm getting there!)
Chicken Tortilla Soup (in the crock-pot, yes, again the crock pot)
Ingredients
1 lb. Chicken Breast trimmed
15oz can sweet whole orn kernals, draned
15oz can diced tomatoes, canned
5c chicken stock (broth)
3/4C onion, chopped
3/4C Green Pepper, chopped
1 Serrano Pepper, Minced
2 cloves garlic minced
1/4 tsp chili powder
1/12 tsp salt divided
1tsp ground pepper, divided
Monterey Jack Cheese, shredded
Seasoned Tortilla strips (we are going to use squished up tortilla chips)
Directions
Add the first 9 ingredients to your slow cooker/crock pot along with 1tsp salt and 3/4 tsp of ground pepper. Cook on high for 4 hours or on low for 8 hours.Before you serve it, remove the chicken and shred it up, again just as yesterday, I'm going to use two forks but you can shred it up any way you want it. You also want to season the chicken with the remaining salt and pepper you have. 1/2 tsp of salt and 1/4 tsp of pepper. place the chicken back into the crock pot and stir gently. Serve it up!

DeleteI noticed that you had a cat pictured with your recipe. I love Chinese and there's nothing better that General Tso's. They say it's made with chicken but I know better.
