Do you ever wake up in the morning (or afternoon, depending on your mood) and its chilly, you hear the wind blowing outside so you go to the window and flip up the blinds and expect to see this...
BUT, what you actually see is this...
Very disappointing.
Anyways, I'm not mother nature so what can you do?
I am not cooking today as my beloved has decided that he shall grace the kitchen with his presence and make us dinner tonight since I cooked last night. (I'm so lucky, I know, you don' have to tell me hehe)
Speaking of last nights dinner-
I made crock pot Chicken Fajitas. All I have to say to that sentence is: YUM!
Here is the recipe, I found it on pinterest, but I tweaked mine a little bit.
Ingredients a.k.a. the foundation of amazing-ness:
3 bell peppers- I did yellow, orange, and red just because the grocery store sells them all together, feel free to use any combo that you like.
1 onion
1 packet of taco seasoning, again with the spiciness level completely up to you, I used mild.
If you like yours a little warmer, sprinkle a little chili powder on the top, maybe with some red pepper flakes for good measure. Again, do what you like.
1 lb. of chicken breasts, boneless, skinless (easy peasy lemon squeeze)
soft shell taco/burrito wraps
any other things you like on your fajitas, i.e. tomatoes, cheese, sour cream etc.
Take your peppers and onion, slice them up into strips place in the bottom of the crock pot.
Place the chicken breasts on top of that- now the breasts can be frozen or thawed, whichever is easiest for you. Personally I did mine frozen because I'm lazy.
Sprinkle the taco seasoning on top of it, turn it on a let it rip!
Now, another piece of helpful advice I will tell you is you don't really need to add much water, if any to this crock pot...yeah, I goofed here. We ended up having to strain out the chicken and things before we put them together.
Cook on low for 6-8 hours
Remove the chicken and shred it, I used 2 forks, some people use a stand mixer with a paddle attachment. whichever floats your boat.
Put the chicken back into the crock pot, let it set for a few minutes and soak up some of the juice, serve and enjoy!
